Shimano knives come in two sizes the 6” and 9”, both are constructed from 420 grade stainless steel which is rust resistant and keeps it's edge longer. They also come with soft grip ergonomic handles that make long filleting sessions more comfortable and also come with a sheath for safety when not in use.
